Preparation

  1. 1

    Prepare the vegetables

Slice the bell peppers, zucchini, and red onion into thick slices. Toss them in olive oil, salt, and black pepper.

  2. 2

    Prepare the meats

Season the wagyu loin and flank with salt and pepper. Slice the chorizo into thick rounds.

Cooking

  1. 3

    Grill the vegetables

Preheat a grill or grill pan over medium-high heat. Grill the vegetables until charred and tender, about 5-7 minutes. Set aside.

  2. 4

    Sear the meats

In a hot grill or skillet, sear the wagyu loin and flank for about 4-5 minutes on each side for medium-rare. Grill the chorizo until slightly crispy.

  3. 5

    Make the Malbec reduction

In a saucepan, combine Malbec wine and beef stock. Bring to a boil and reduce until thickened, about 15 minutes. Whisk in butter for a glossy finish.

Serving

  1. 6

    Plate the dish

Arrange the grilled vegetables on a platter, slice the meats, and place them on top. Drizzle with the Malbec reduction before serving.
