    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and mix in rice vinegar, sugar, and salt. Allow to cool.

    Prepare the Wagyu

    Slice the Wagyu beef into thin pieces, about 1/4 inch thick. The meat should be well-marbled for the best flavor.

    Form the Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of Wagyu on top of the rice.

    Add Foie Gras Butter

    Top each piece of nigiri with a small dollop of foie gras butter.

    Serve with Condiments

    Drizzle ponzu sauce over the nigiri. Serve with wasabi and pickled ginger on the side.
