Prepare the Pork Chops
Preheat your oven to 375°F (190°C). Season the double bone-in pork chops with olive oil, salt, and black pepper on both sides.

Sear the Pork Chops
In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Sear the pork chops for about 4-5 minutes on each side until they are golden brown.

Bake the Pork Chops
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).

Add the Brie Cheese
Remove the skillet from the oven and place a generous amount of brie cheese on top of each pork chop. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Serve with Chutney
Remove the pork chops from the oven and let them rest for a few minutes. Serve with fruit chutney and drizzle with balsamic demi on top.
