Preparation and Cooking Instructions

Prepare the Stuffing

In a bowl, combine diced apple, brie cheese, minced garlic, salt, and pepper. Mix well and set aside.

Stuff the Salmon

Take each salmon fillet and create a pocket in the side. Stuff each pocket with the apple and brie mixture.

Wrap with Bacon

Wrap each stuffed salmon fillet with two strips of bacon, securing the ends with toothpicks if necessary.

Cook the Salmon

Preheat oven to 375°F (190°C). Heat olive oil in a skillet over medium heat. Sear the bacon-wrapped salmon for 3-4 minutes on each side until golden brown. Transfer to the oven and bake for 12-15 minutes until the salmon is cooked through.

Prepare Garlic Mashed Potatoes

Boil the diced potatoes in salted water until tender. Drain and return to pot. Add butter, milk, and minced garlic. Mash until smooth and creamy. Season with salt and pepper to taste.

Sauté Seasonal Vegetables

In a separate pan, sauté seasonal vegetables in olive oil over medium heat until tender, about 5-7 minutes.

Make Citrus Beurre Blanc

In a saucepan, combine shallot, white wine, and citrus juices. Simmer until reduced by half. Add heavy cream and simmer for another 5 minutes. Gradually whisk in cold butter until the sauce is emulsified. Season with salt to taste.

Serve

Plate the garlic mashed potatoes and seasonal vegetables alongside the stuffed salmon. Drizzle with citrus beurre blanc before serving.
