Cook the Pasta

In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables

In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

Add Garlic and Bison

Stir in the minced garlic and cook for 1 minute until fragrant. Add the ground bison and cook, breaking it up with a spoon, until browned, about 5-7 minutes.

Simmer the Sauce

Pour in the red wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes. Then add the crushed tomatoes, oregano, basil, salt, and black pepper. Stir well and let it simmer on low for 20-25 minutes, stirring occasionally.

Combine and Serve

Toss the cooked fettuccine with the bison Bolognese sauce until well coated. Serve hot, garnished with grated Parmesan cheese.
