Preparation

  1. 1

    Prepare the Watermelon

Cut the watermelon into small chunks and remove any seeds. Measure out 4 cups of watermelon chunks.

  2. 2

    Muddle the Mint

In a large mixing bowl, add 1 cup of fresh mint leaves. Using a muddler or the back of a wooden spoon, gently crush the mint to release its oils.

  3. 3

    Combine Ingredients

Add the watermelon chunks and lime juice to the bowl with the muddled mint. Stir gently to combine and let it sit for about 10 minutes to enhance the flavors.

Mixing

  1. 4

    Blend the Watermelon Mixture

Transfer the watermelon, mint, and lime mixture to a blender. Blend until smooth for about 30 seconds.

  2. 5

    Strain the Mixture

Using a fine mesh strainer, strain the blended mixture into a large pitcher to remove any solids. Press down with a spatula to extract as much juice as possible.

  3. 6

    Add Coconut Water

Pour in the coconut water and stir well to combine.

  4. 7

    Add Sparkling Water

Just before serving, gently pour in the sparkling water to retain the fizz. Stir gently.

Serving

  1. 8

    Garnish and Serve

Pour the Watermelon Wave into glasses. Garnish with lime wedges and extra mint leaves if desired. Serve immediately and enjoy!
