Chicken Enchilada Soup

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced bell pepper. Sauté for about 5 minutes until the vegetables are softened.

    Combine Ingredients

    Add the shredded chicken, chicken broth, diced tomatoes with green chilies, enchilada sauce, corn, cumin, chili powder, salt, and pepper to the pot. Stir to combine.

    Simmer the Soup

    Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, stirring occasionally.

    Serve the Soup

    Ladle the soup into bowls and top with shredded cheddar cheese, a dollop of sour cream, and fresh cilantro as desired.

Caesar Salad or House Salad

    Prepare the Salad Greens

    For the Caesar salad, toss the chopped romaine lettuce with croutons, grated Parmesan cheese, and Caesar dressing in a large bowl. For the house salad, combine the chopped romaine, halved cherry tomatoes, and diced cucumber in a large bowl.

    Dress the House Salad

    In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the house salad and toss to coat.
