Preparing the Roasted Chicken

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Garlic Butter Mixture

    In a bowl, mix the melted butter, lemon juice, minced garlic, olive oil, salt, black pepper, chopped rosemary, and chopped thyme.

    Season the Chicken

    Place the half chicken in a roasting pan. Use a brush to coat the chicken generously with the garlic butter mixture. Ensure to get some under the skin for more flavor.

    Roast the Chicken

    Roast the chicken in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown. Baste the chicken with the pan juices halfway through.

Making the Mashed Potatoes

    Boil the Potatoes

    In a large pot, add the peeled and cubed russet potatoes. Cover with water and bring to a boil. Add salt and cook for about 15-20 minutes or until the potatoes are fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the butter and milk. Mash until smooth and creamy. Season with additional salt and black pepper to taste.

Cooking the Seasonal Vegetables

    Wash and chop the mixed seasonal vegetables into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the mixed vegetables and season with salt and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.
