Cook the Rice
In a medium pot, bring 4 cups of water to a boil. Add 2 cups of white rice, reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.

Prepare the Vegetables
While the rice is cooking, chop the broccoli into small florets, slice the bell pepper into strips, and thinly slice the onion.

Prepare the Chicken
Cut the chicken breast into bite-sized pieces and season with salt and pepper.

Cook the Chicken
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

Stir-fry the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add the broccoli, bell pepper, and onion. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

Prepare the Sauce
In a small bowl, mix together the soy sauce, minced garlic, Szechuan peppercorns, brown sugar, cornstarch, and water until well combined.

Combine Everything
Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the chicken and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.

Fluff the cooked rice with a fork and serve it on plates. Top with the chicken stir fry mixture and enjoy!
