Method

Prepare the Fish and Batter

    Make the Batter

    In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the LandShark® Lager, whisking until the batter is smooth and has no lumps.

    Prepare the Fish

    Pat the fish fillets dry with paper towels. Cut them into smaller pieces if desired for easier handling. Dip each piece into the batter, ensuring they are fully coated.

Fry the Fish

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Carefully lower the battered fish pieces into the hot oil, a few at a time. Fry for about 4-5 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Prepare the French Fries

    Cut and Soak the Potatoes

    Peel the potatoes and cut them into fries. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat the vegetable oil in another pot or fryer to 350°F (175°C). Drain the fries from the water and pat them dry. Fry the potatoes in batches for about 5-7 minutes, or until golden brown. Remove and season with salt.

Make the Jalapeño Tartar Sauce

    Combine Ingredients

    In a bowl, mix together the mayonnaise, dill pickles, capers, jalapeño, lemon juice, salt, and black pepper. Adjust seasoning to taste.
