    Sauté the Sausage

    In a large pot, heat the olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes. Remove the sausage from the pot and set aside.

    Cook the Chicken

    In the same pot, add the diced chicken breast and cook until no longer pink, about 5-7 minutes. Remove and set aside with the sausage.

    Sauté the Vegetables

    Add the chopped onion, bell pepper, and celery to the pot. Sauté for about 5 minutes until softened. Then add the minced garlic and cook for an additional 1-2 minutes.

    Combine Ingredients

    Return the sausage and chicken to the pot. Add the diced tomato, Cajun seasoning, bay leaves, black pepper, and salt. Stir well to combine.

    Add Rice and Broth

    Add the long grain rice and chicken broth to the pot. Stir to mix all the ingredients together.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

    Final Touches

    Once the rice is cooked, remove from heat and discard bay leaves. Stir in the sliced green onions for a fresh flavor.
