Chicken Marinade

Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Breading
In a shallow dish, mix together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. Remove the marinated chicken from the refrigerator and shake off excess marinade. Dredge each piece of chicken in the flour mixture until fully coated.

Fry the Chicken
In a deep skillet or frying pan, heat vegetable oil over medium-high heat. Once the oil is hot, carefully place the breaded chicken pieces in the skillet. Fry for about 5-7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F). Remove and place on a paper towel-lined plate to drain excess oil.

Assemble the Sandwich
Toast the brioche buns lightly. Spread mayonnaise on the bottom half of each bun. Place a fried chicken thigh on top, add a slice of Monterey Jack cheese, and a generous amount of dill pickles. Drizzle hot honey over the pickles and add the top half of the bun.

Prepare frozen French fries according to package instructions, typically baking or frying until golden and crispy. Once cooked, sprinkle with salt to taste.
