Method

Prepare the Grilled Fish

    Marinate the Mahi Mahi

    In a bowl, combine olive oil, lime juice, ground cumin, and salt. Add the Mahi Mahi fillets and coat them evenly. Let marinate for at least 15 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Place the marinated Mahi Mahi fillets on the grill and cook for about 4-5 minutes on each side or until the fish flakes easily with a fork.

Prepare the Grilled Habanero Cream Sauce

    Blend the Sauce

    In a blender, combine habanero peppers (seeds removed for less heat if desired), sour cream, mayonnaise, lime juice, and salt. Blend until smooth. Taste and adjust salt if necessary. Set aside.

Prepare the Guacamole

    Mash the Avocados

    In a bowl, mash the ripe avocados with a fork until smooth. Add lime juice, garlic powder, cilantro, and salt. Mix well and adjust seasoning to taste.

Prepare the Mango Pico de Gallo

    Mix the Ingredients

    In a bowl, combine diced mango, diced tomato, diced red onion, cilantro, lime juice, and salt. Toss gently to combine, then set aside.

Prepare the Black Beans and White Rice

    Heat the Black Beans

    In a saucepan, heat the canned black beans over medium heat. Stir in cumin and salt to taste. Cook until heated through.

Assemble the Tacos

    Build the Tacos

    Warm the corn tortillas on the grill for about 30 seconds on each side. Layer each tortilla with grilled Mahi Mahi, a drizzle of grilled habanero cream sauce, guacamole, shredded lettuce, and top with mango pico de gallo.
