Prepare the Shrimp
Pat the shrimp dry with paper towels and season with salt and black pepper.

In three separate bowls, place the flour, beaten egg, and a mixture of coconut flakes and panko breadcrumbs.

Bread the Shrimp
Dip each shrimp into the flour, shaking off the excess, then dip into the egg, and finally coat with the coconut-panko mixture. Press lightly to adhere.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Fry the Shrimp
Fry the shrimp in batches, about 3-4 minutes on each side, or until golden brown. Drain on paper towels.
Pineapple Dipping Sauce

Combine Ingredients
In a small bowl, combine the diced pineapple, brown sugar, soy sauce, lime juice, and red pepper flakes.

Mix well and let the sauce sit for at least 15 minutes to allow the flavors to meld.

Prepare the frozen French fries according to package instructions, usually by baking or frying.
