Carnitas Preparation

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Meat
In a large bowl, combine the cumin, oregano, salt, and black pepper. Rub the spice mixture all over the pork pieces.

Cook the Pork
Place the seasoned pork in a slow cooker. Add the garlic cloves (smashed), onion (quartered), orange (quartered), lime (juiced), bay leaves, and chicken broth. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard the bay leaves and any large pieces of fat.

Crisp the Carnitas
Spread the shredded pork on a baking sheet and broil in the oven for 5-7 minutes until the edges are crispy.

Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Serve the tacos with lime wedges, chips, and salsa on the side.
