    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Rinse under cold water and pat dry.

    Cook the Sausage

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the breakfast sausage and cook until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the Potatoes

    In the same skillet, add another tablespoon of olive oil. Add the diced potatoes, season with salt and black pepper, and cook until golden and tender, about 10-15 minutes. Stir occasionally to prevent sticking.

    Scramble the Eggs

    In a bowl, crack the eggs and whisk until well combined. Pour the eggs into the skillet with the cooked potatoes and scramble until fully cooked, about 3-5 minutes.

Assembly

    Assemble the Burrito

    Lay a flour tortilla flat on a clean surface. Spoon a portion of the sausage, scrambled eggs, and potato mixture onto the center of the tortilla. Sprinkle with cheddar cheese.

    Roll the Burrito

    Fold the sides of the tortilla inwards over the filling, then roll from the bottom up to enclose the filling. Make sure to tuck in the sides as you roll for a neat finish.

    Serve

    Repeat the assembly process for the remaining tortillas. Serve immediately with salsa or hot sauce, if desired.
