Preheat the Oven
Preheat your oven to 300°F (150°C).

Season the Ribs
In a small bowl, mix salt, black pepper, garlic powder, onion powder, and paprika. Rub this spice mixture all over the baby back ribs, ensuring they are well coated.

Wrap the Ribs
Wrap the seasoned ribs tightly in aluminum foil, creating a packet that will keep the moisture in.

Bake the Ribs
Place the wrapped ribs on a baking sheet and bake in the preheated oven for 2.5 to 3 hours, or until they are fork-tender.

Broil the Ribs
Preheat your broiler. Place the ribs under the broiler for about 5-7 minutes, or until the sauce is caramelized and bubbling.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips to create fries.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches. Fry until they are golden brown and crispy, about 4-5 minutes.

Remove the fries from the oil and drain them on paper towels. Immediately sprinkle with salt to taste.
