Prepare the Noodles
Bring a large pot of water to a boil. Add the yakisoba noodles and cook according to package instructions, typically about 3-4 minutes. Drain and set aside.

Chop the Vegetables
While the noodles are cooking, prepare the vegetables by shredding the cabbage, julienning the carrot, and slicing the bell pepper. Chop the green onions and set aside.

Stir-fry the Vegetables
In a large pan or wok, heat a tablespoon of sesame oil over medium-high heat. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant. Then, add the cabbage, carrot, and bell pepper. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.

Add the Noodles and Sauce
Add the drained yakisoba noodles to the pan with the vegetables. In a small bowl, mix together the soy sauce, oyster sauce, and sugar. Pour the sauce over the noodles and vegetables, tossing well to combine. Continue to stir-fry for an additional 2-3 minutes until everything is heated through.

Remove the pan from heat. Serve the yakisoba noodles hot, garnished with chopped green onions, sesame seeds, and nori strips on top.
