Prepare the Vegetables
Wash and cut the cherry tomatoes in half. Clean the mushrooms and remove the stems. Cut the red and yellow bell peppers into 1-inch pieces. Peel and cut the onion into wedges.

Marinate the Vegetables
In a large bowl, combine the cherry tomatoes, mushrooms, bell peppers, and onion. Add soy sauce, olive oil, salt, and black pepper. Toss well to coat all the vegetables evenly. Let it marinate for at least 15 minutes.

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated vegetables onto the skewers, alternating colors and types.

Rinse the Rice
Rinse the white rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium pot, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed.
