Dumpling Dough

    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Pork Filling

    Prepare the Pork Filling

    In a bowl, mix ground pork, chopped green onions, soy sauce, sesame oil, minced ginger, and minced garlic until well combined. Set aside.

Shrimp Filling

    Prepare the Shrimp Filling

    In a bowl, mix peeled and deveined shrimp, chopped green onions, soy sauce, sesame oil, minced ginger, and minced garlic until well combined. Set aside.

Dumpling Assembly

    Assemble the Dumplings

    Divide the rested dough into small balls (about 1 inch in diameter). Roll each ball into a thin circle (about 3 inches in diameter). Place a spoonful of either pork or shrimp filling in the center of each circle. Fold the dough over the filling and pinch the edges together to seal.

Steaming

    Steam the Dumplings

    Prepare a steamer basket lined with parchment paper. Place the dumplings in the basket, making sure they are not touching. Steam over boiling water for about 15-20 minutes or until fully cooked.

Dipping Sauce

    Prepare the Dipping Sauce

    In a small bowl, mix soy sauce, rice vinegar, chili oil, and sesame seeds. Stir well and set aside for serving.
