Method

Preparation

  1. 1

    Prepare the Scallops

Rinse the scallops under cold water and pat them dry with paper towels. Season with salt and black pepper.

  2. 2

    Chop Vegetables

Finely chop the green onions and mince the garlic cloves.

  3. 3

    Prepare the Eggs

In a small bowl, beat the eggs until well mixed.

Cooking

  1. 4

    Cook the Scallops

In a large skillet or wok, heat sesame oil over medium-high heat. Add the seasoned scallops and cook for about 2-3 minutes on each side until they are golden brown and cooked through. Remove scallops from the pan and set aside.

  2. 5

    Scramble the Eggs

In the same skillet, add a little more oil if necessary. Pour in the beaten eggs and scramble until fully cooked. Remove and set aside with the scallops.

  3. 6

    Stir-Fry the Vegetables

Add a bit more oil to the skillet and add the minced garlic and chopped green onions. Stir-fry for about 1 minute until fragrant.

  4. 7

    Add Rice and Peas

Add the cooked rice and frozen peas to the skillet. Stir well to combine and cook for about 3-4 minutes until heated through.

  5. 8

    Combine Ingredients

Return the cooked scallops and scrambled eggs to the skillet. Pour in soy sauce and mix everything together thoroughly. Cook for another 2 minutes.

Serving

  1. 9

    Plate the Dish

Spoon the scallops fried rice onto plates or bowls. Garnish with additional chopped green onions if desired, and serve hot.
