Method

Preparing the Rice

    Cook the Rice

    In a medium saucepan, combine 1 cup of white rice and 2 cups of water. Bring to a boil over high heat.

    Simmer

    Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is tender and the water is absorbed.

    Fluff the Rice

    Remove the saucepan from heat and let it sit covered for 5 minutes. Then fluff the rice with a fork and set aside.

Cooking the Asparagus

    Prepare the Asparagus

    Wash the asparagus and trim the tough ends. Cut the asparagus into 2-inch pieces.

    Sauté the Asparagus

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus pieces and sauté for about 5 minutes until tender.

    Add Ginger

    Grate 1 tablespoon of fresh ginger and add it to the skillet. Season with 1 teaspoon of salt and cook for an additional minute. Remove from heat and set aside.

Cooking the Scallops

    Season the Scallops

    Pat the scallops dry with paper towels and season with salt and black pepper on both sides.

    Sear the Scallops

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add the scallops and sear for 2-3 minutes on each side until golden brown and cooked through.

    Add Garlic and Soy Sauce

    Add minced garlic (3 cloves) to the skillet and sauté for about 30 seconds until fragrant. Then pour in 1 cup of soy sauce, stirring to coat the scallops. Cook for an additional 1-2 minutes until the sauce slightly thickens.

    Serve

    Plate the seared scallops, steamed rice, and ginger asparagus. Drizzle any remaining sauce over the scallops and serve immediately.
