    Prepare the Quinoa

    Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid has been absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Chop Vegetables

    While the quinoa is cooking, chop the zucchini, bell pepper, and halve the cherry tomatoes. Set aside.

    Prepare Chickpeas

    If using canned chickpeas, drain and rinse them under cold water. If using cooked chickpeas, ensure they are ready to use.

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute until fragrant. Add the chopped zucchini and bell pepper to the skillet and sauté for about 5 minutes, stirring occasionally until they begin to soften.

    Add Spinach and Tomatoes

    Stir in the fresh spinach and halved cherry tomatoes, cooking for an additional 3-4 minutes until the spinach wilts and tomatoes soften. Season with salt, black pepper, and basil.

    Combine with Quinoa

    Once the vegetables are cooked, add the cooked quinoa and chickpeas to the skillet. Stir everything together until well combined and heated through, about 2-3 minutes.
