Method

Prepare the Mochi Dough

    Mix Ingredients

    In a microwave-safe bowl, combine the sweet rice flour and sugar. Gradually add water while stirring until the mixture is smooth and free of lumps.

    Heat the Mixture

    Cover the bowl with plastic wrap, leaving a small vent for steam. Microwave on high for 1 minute, then stir. Repeat this process for 2-3 minutes until the dough becomes sticky and translucent.

    Cool the Dough

    Once cooked, let the mochi dough cool for about 10 minutes. Dust a clean surface with cornstarch to prevent sticking.

    Shape the Mochi

    Transfer the dough to the dusted surface and flatten it out. Cut it into small squares, about 3-4 inches in size.

Assemble the Mochi

    Scoop Ice Cream

    Using a small ice cream scoop, take a scoop of your preferred ice cream (vanilla or matcha) and place it in the center of a mochi square.

    Wrap the Ice Cream

    Carefully fold the edges of the mochi over the ice cream and pinch to seal, forming a ball. Make sure the ice cream is fully enclosed.

    Repeat Process

    Repeat the scooping and wrapping process until all the dough and ice cream is used.

    Freeze the Mochi

    Place the wrapped mochi on a baking sheet lined with parchment paper and freeze for at least 2 hours until firm.
