Method
Prepare Churro Dough
Combine Ingredients
In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat.
Add Flour
Once boiling, remove the saucepan from heat and quickly stir in all-purpose flour until a dough forms.
Add Eggs and Vanilla
Allow the dough to cool slightly, then beat in the eggs one at a time, incorporating thoroughly before adding the next. Mix in vanilla extract.
Make Sugar Coating
Mix Sugar and Cinnamon
In a shallow bowl, combine granulated sugar and ground cinnamon. Set aside for coating the churros.
Make Chocolate Sauce
Heat Cream
In a small saucepan, heat heavy cream over medium heat until it begins to simmer.
Melt Chocolate
Remove from heat and add semi-sweet chocolate chips. Stir until chocolate is completely melted and smooth. Mix in vanilla extract.
Fry Churros
Heat Oil
In a deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Pipe Churros
Transfer dough to a piping bag fitted with a star tip. Pipe 4-6 inch strips of dough into the hot oil, cutting with scissors.
Fry Until Golden
Fry churros until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
