Method
Cake Preparation
Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it's hot enough to create the molten center.
Melt Chocolate and Butter
In a heatproof bowl, combine the unsweetened dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in short bursts, stirring until smooth. Allow to cool slightly.
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and thick, about 3-4 minutes.
Add Flour and Vanilla
Sift the all-purpose flour over the chocolate mixture and gently fold it in until just combined. Add the vanilla extract and mix until smooth.
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
Cool Slightly
Remove the cakes from the oven and let them cool for 1 minute before inverting onto plates.
Serving Instructions
Serve and Enjoy
Carefully lift the ramekins and invert them onto dessert plates. Allow the cakes to rest for a moment before removing the ramekin. Serve immediately with a scoop of vanilla ice cream on the side.
