Prepare the Filling

In a large skillet, heat a small amount of oil over medium heat. Add the chopped onion and garlic and sauté until the onion becomes translucent, about 3-5 minutes. Stir in the diced green bell pepper and cook for an additional 2-3 minutes.

Season the Filling

Add the cooked shredded chicken to the skillet along with cumin, chili powder, salt, and black pepper. Mix well and cook for about 5 minutes until everything is heated through.

Prepare the Tortillas

Preheat your oven to 375°F (190°C). Warm the corn tortillas in a dry skillet or microwave until they are pliable, about 30 seconds each side or 15-20 seconds in the microwave wrapped in a damp towel.

Fill the Tortillas

Spoon about 1/4 cup of the chicken mixture onto each tortilla, roll them up tightly, and place them seam-side down in a greased baking dish.

Add Sauce and Cheese

Once all tortillas are filled and placed in the baking dish, pour the enchilada sauce evenly over the top, then sprinkle the shredded cheese over the sauce.

Bake

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Remove from the oven and let cool for a few minutes before serving.
