Preparation

  1. 1

    Clean and Prepare Calamari

Rinse the calamari under cold water and pat dry with paper towels. Cut into rings or strips, depending on your preference.

  2. 2

    Chop Vegetables

Finely chop the green onions, carrot, and bell pepper. Mince the garlic cloves.

Cooking

  1. 3

    Cook Calamari

In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the calamari and stir-fry for 2-3 minutes until they turn opaque and are cooked through. Remove from the skillet and set aside.

  2. 4

    Sauté Vegetables

In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and sauté for 30 seconds until fragrant. Then add the chopped carrots, bell pepper, and frozen peas. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

  3. 5

    Add Rice and Seasonings

Add the cooked jasmine rice to the skillet with the sautéed vegetables. Pour in the soy sauce, salt, black pepper, and chili flakes. Stir everything together, breaking up any clumps of rice, and cook for another 3-4 minutes until heated through.

  4. 6

    Combine Calamari and Finish

Return the cooked calamari to the skillet. Toss everything together to combine well. Adjust seasoning if necessary. Cook for an additional 1-2 minutes to heat through.

Serving

  1. 7

    Garnish and Serve

Serve the fried rice hot, garnished with lime wedges and chopped cilantro.
