Preparing the Focaccia Base

Activate the Yeast
In a small bowl, combine warm water (1.5 cups) and sugar (1 tsp). Sprinkle the active dry yeast (2 tsp) on top and let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tbsp). Make a well in the center and pour in the yeast mixture and olive oil (0.5 cups). Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Form the dough into a ball.

First Rise
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Assembling the Truffaiola

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Pan
Once the dough has risen, punch it down and transfer it to a greased baking sheet or a focaccia pan. Stretch and press the dough to fit the pan.

Add Toppings
Evenly distribute the mozzarella cheese (2 cups) and Gorgonzola cheese (0.5 cups) over the dough. Slice the cremini mushrooms (1 cup) and scatter them on top, followed by the speck (4 oz) cut into strips.

Drizzle with Truffle Oil
Drizzle the truffle oil (2 tbs) over the topped focaccia. Sprinkle fresh rosemary (1 tbs) and black pepper (to taste) on top.

Bake
Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and the cheese is bubbly.

Serve
Remove from the oven and let it cool slightly before slicing. Serve warm.
