Infused Olive Oil

    Prepare the Infused Olive Oil

    In a small saucepan, combine 1 cup of extra virgin olive oil with 4 sprigs of fresh rosemary. Heat over low heat for about 10-15 minutes, allowing the flavors to infuse. Do not let it boil. Once done, remove from heat and let it cool. Strain out the rosemary before using.

    Prepare the Ingredients

    Slice the red onion thinly and chop the sweet pancetta into small pieces. If you haven't already roasted the potatoes, chop them into bite-sized pieces, toss them in olive oil, salt, and pepper, and roast at 400°F (200°C) for about 25-30 minutes until golden brown.

    Assemble the Pizza

    Preheat your oven to 475°F (245°C). Roll out your pizza dough on a floured surface to your desired thickness. Spread a thin layer of the rosemary-infused olive oil on the dough as a base. Evenly distribute 2 cups of mozzarella cheese over the dough, followed by the sliced red onions, chopped pancetta, roasted potatoes, and finally the baby spinach.

    Add Parmigiano and Bake

    Sprinkle 0.5 cup of grated Parmigiano cheese over the top of the assembled pizza. Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly and slightly browned. Remove from the oven and let it cool slightly before slicing.
