Prepare the Ravioli Filling

Sauté the Spinach
In a large skillet over medium heat, add a tablespoon of olive oil and sauté the fresh spinach until wilted, about 3-4 minutes. Remove from heat and let cool.

Mix the Filling
In a mixing bowl, combine the ricotta cheese, sautéed spinach (chopped), grated Parmesan cheese, egg, salt, and black pepper. Mix until well combined and set aside.

Combine Ingredients
In a large bowl, mix the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil.

Assemble and Cook the Ravioli

Roll Out the Dough
Divide the rested dough into four pieces. Roll out each piece into a thin sheet using a pasta machine or rolling pin.

Fill the Ravioli
Place teaspoons of the filling about 2 inches apart on one sheet of dough. Moisten the edges with water, then fold the dough over to create a pocket. Press down to seal and cut out individual ravioli.

Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

Serve
Plate the ravioli and top with the warm tomato basil sauce. Garnish with additional Parmesan cheese and fresh basil if desired.
