Pizza Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.

Knead Dough
Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Pizza
Preheat your oven to the highest setting (around 475°F or 245°C). Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.

Assemble Pizza
Spread a layer of San Marzano tomato sauce on the rolled-out dough. Tear the fior di latte cheese into pieces and distribute evenly over the sauce. Add dollops of spicy 'nduja sausage and the fried eggplant slices.

Transfer the assembled pizza to a preheated pizza stone or baking tray. Bake for about 10-12 minutes, or until the crust is golden and crispy.
