Method
Prepare the Dough

Activate Yeast
In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture along with olive oil.

Knead the Dough
Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.

Let it Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Make the Sauce

Add Tomatoes and Seasonings
Add San Marzano tomatoes, salt, black pepper, and dried oregano. Simmer for about 20 minutes, stirring occasionally.
Assemble the Pizza

Preheat the Oven
Preheat your oven to 250°C (482°F) or as high as it will go.

Shape the Dough
Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion into a 12-inch circle on a floured surface.

Add Sauce and Cheese
Spread a generous amount of San Marzano tomato sauce over each dough circle, leaving a small border. Sprinkle shredded mozzarella and dollops of fresh ricotta on top.

Add Prosciutto and Bake
Layer the prosciutto cotto slices over the cheese. Transfer the pizza to a baking sheet or pizza stone and bake for 10-12 minutes until the crust is golden and cheese is bubbly.

Drizzle with Hot Honey
Remove the pizza from the oven and drizzle hot honey over the top. Garnish with fresh basil leaves before slicing and serving.
