Preparation of Mussels

    Rinse the fresh mussels under cold running water, scrubbing the shells to remove any dirt or barnacles.

    Remove the beards (the fibrous strands) from the mussels by pulling them towards the hinge of the shell.

    Discard any mussels that are open and do not close when tapped.

Making the Sauce

    Sautéing Aromatics

    In a large pot, heat the olive oil over medium heat. Add the sliced leeks and cook until they are soft and translucent, about 5 minutes.

    Adding Garlic

    Add the minced garlic to the pot and sauté for an additional minute, being careful not to let it burn.

    Combining Tomatoes and Wine

    Pour in the crushed San Marzano tomatoes and white wine. Stir to combine.

    Seasoning the Sauce

    Add the red pepper flakes, salt, and black pepper to the sauce. Bring to a simmer and let cook for 10 minutes to allow the flavors to meld.

Cooking the Mussels

    Add the cleaned mussels to the pot with the sauce. Cover the pot and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.
