Prepare Spicy E.V.O.O.

Make the Spicy Oil
In a small saucepan, combine the extra virgin olive oil, red pepper flakes, and minced garlic. Heat over low heat for about 5 minutes, allowing the flavors to infuse. Do not let the oil smoke.

Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt, black pepper, and olive oil. Grill for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let them rest for a few minutes before slicing.
Prepare the Vegetables and Assemble

Sauté the Rapini
While the chicken is resting, bring a pot of salted water to a boil. Blanch the rapini for about 2-3 minutes until bright green, then drain and immediately plunge into ice water to stop cooking. In a skillet, heat a little olive oil and sauté the rapini for about 5 minutes until tender.

Assemble the Dish
In a serving dish, layer the sliced grilled chicken, sautéed rapini, mozzarella, Asiago cheese, and roasted red peppers. Drizzle the spicy E.V.O.O. over the top and serve immediately.
