Sauce Preparation

    Make the Sauce

    In a saucepan over medium heat, add olive oil. Once hot, add minced garlic and sauté until fragrant, about 1 minute.

    Add San Marzano tomatoes (crushed), salt, black pepper, and dried oregano. Stir to combine and bring to a simmer.

    Reduce heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.

Toppings Preparation

    Prepare the Rapini

    In a pot of boiling salted water, blanch the rapini for about 2-3 minutes until bright green. Drain and shock in ice water, then chop into bite-sized pieces.

    Cook the Sausage

    In a skillet over medium heat, remove the casing from the spicy Italian sausage and crumble it into the pan. Cook until browned and cooked through, about 5-7 minutes.

    Prepare the Cherry Tomatoes

    Halve the cherry tomatoes and toss them with extra virgin olive oil and red pepper flakes. Set aside.

Assembly

    Assemble the Dish

    Preheat the oven to 475°F (245°C). Spread a layer of the prepared tomato sauce on the bottom of a baking dish.

    Top with cooked sausage, blanched rapini, and halved cherry tomatoes. Tear the mozzarella into pieces and scatter over the top.

    Drizzle with a little extra virgin olive oil and place in the oven. Bake for about 15-20 minutes, or until the cheese is melted and bubbly.
