Method
Prepare the Kung Fu Stack
Mix the Chicken Mixture
In a large mixing bowl, combine ground chicken, soy sauce, sesame oil, minced garlic, grated ginger, chopped green onions, eggs, cornstarch, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Cook the Bok Choy
In a large skillet over medium heat, add a splash of sesame oil. Once hot, add the chopped bok choy and stir-fry for about 3-4 minutes, or until it is tender. Remove from the skillet and set aside.
Form the Stacks
Using your hands, take portions of the chicken mixture and form them into small patties or stacks, about 2 inches thick.
Cook the Stacks
In the same skillet, add a little more sesame oil if necessary. Cook the patties/stacks over medium heat for about 5-6 minutes on each side, or until they are fully cooked and golden brown.
Serve the Kung Fu Stack
Serve the Kung Fu Stack over a bed of cooked rice or quinoa. Garnish with sesame seeds and chili flakes to taste.
