Preparing the Chimichurri

Chop the Herbs

Finely chop the fresh parsley and cilantro and place them in a medium mixing bowl.

Add Garlic

Mince the garlic cloves and add them to the bowl with the chopped herbs.

Mix in Remaining Ingredients

Add the red wine vinegar, olive oil, red pepper flakes, salt, and black pepper to the bowl. Mix well until all ingredients are combined.

Let It Rest

Cover the chimichurri sauce and let it sit for at least 30 minutes at room temperature to allow the flavors to meld.

Prepare the Steak

Pat the flat iron steak dry with paper towels. Rub both sides with olive oil, and season generously with salt and black pepper.

Preheat the Grill or Pan

Preheat your grill or a cast-iron skillet over medium-high heat for about 5 minutes.

Cook the Steak

Place the steak on the grill or skillet and cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

Once cooked, transfer the steak to a cutting board and let it rest for at least 5 minutes before slicing.
