Prepare the Wonton Filling

In a large bowl, combine the ground pork, chopped shrimp, green onions, minced garlic, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
Assemble the Wontons

Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the filling mixture into the center of the wrapper. Moisten the edges with water and fold the wrapper in half diagonally to form a triangle. Press the edges to seal tightly. You can also bring the two corners of the triangle together to form a little pouch if desired. Repeat this process until all filling is used.
Prepare the Soup Broth

In a large pot, combine the chicken broth and water. Add the sliced ginger, smashed garlic, and soy sauce. Bring to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 10 minutes to allow the flavors to meld.
Cook the Wontons

Carefully add the prepared wontons to the simmering broth. Cook for about 5-7 minutes or until the wontons float to the top and are cooked through. Taste the broth and add salt as needed.
