Cook the Noodles
Bring a large pot of salted water to a boil. Add the lo-mein noodles and cook according to package instructions until al dente, usually about 5-7 minutes. Drain and set aside.

Prepare the Vegetables
While the noodles are cooking, wash and slice the bell pepper, julienne the carrot, and chop the broccoli into small florets. Trim the snap peas and slice the green onions.

Stir-fry the Vegetables
In a large skillet or wok, heat a tablespoon of sesame oil over medium-high heat. Add the bell pepper, carrot, broccoli, snap peas, and green onions. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

In a small bowl, whisk together soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and water until well combined.

Once the vegetables are cooked, add the drained lo-mein noodles to the skillet. Pour the sauce over the noodles and vegetables. Toss everything together and cook for an additional 2-3 minutes until the noodles are heated through and the sauce has thickened slightly.
