    Prepare the Tofu

    Press the firm tofu to remove excess moisture. Cut into bite-sized cubes.

    Chop the Vegetables

    Slice the bell peppers, carrots, and prepare the broccoli and snap peas.

Cooking

    Sauté Tofu

    In a large skillet, heat vegetable oil over medium heat. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes. Remove from skillet and set aside.

    Cook Vegetables

    In the same skillet, add a bit more oil if necessary, then add the sliced vegetables (bell peppers, broccoli, carrots, and snap peas). Stir-fry for about 3-5 minutes until they are tender but still crisp.

    Add Curry Paste

    Stir in your choice of curry paste and cook for another 2 minutes until fragrant.

    Combine Ingredients

    Add the sautéed tofu back to the skillet along with the coconut milk, vegetable broth, soy sauce, brown sugar, lime juice, and salt. Stir well to combine.

    Simmer

    Bring the mixture to a gentle simmer and let it cook for about 10 minutes, allowing the flavors to meld together.

Serving

    Garnish and Serve

    Serve the curry hot, garnished with fresh basil or cilantro and lime wedges. Enjoy!
