Preparation
- 1
Prepare the Chicken
Cut the chicken breast into bite-sized pieces and season lightly with salt and pepper.
- 2
Chop the Vegetables
Slice the red bell pepper into thin strips, chop the carrot into thin rounds, and chop the green onions into 1-inch pieces.
- 3
Prepare the Sauce
In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, honey, cornstarch, and water until smooth. Mince the garlic and ginger, then add to the sauce mixture.
Cooking
- 4
Cook the Chicken
In a large skillet or wok over medium-high heat, add a tablespoon of oil. Once hot, add the chicken pieces and stir-fry for 5-7 minutes until fully cooked. Remove from the skillet and set aside.
- 5
Stir-Fry the Vegetables
In the same skillet, add a bit more oil if needed, and add the broccoli, red bell pepper, and carrot. Stir-fry for about 3-4 minutes until just tender.
- 6
Combine Everything
Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything in the sauce. Cook for an additional 2-3 minutes, allowing the sauce to thicken.
- 7
Finish and Serve
Sprinkle with cashews and green onions. If desired, top with red chili flakes and chopped cilantro before serving. Serve hot over rice or noodles.
