Prepare Chicken

    Marinate Chicken

    In a bowl, combine the chicken breasts, soy sauce, cornstarch, and vegetable oil. Mix well to coat the chicken evenly. Cover and let marinate in the refrigerator for at least 30 minutes.

    Cook Chicken

    Heat a large skillet or wok over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

Prepare Sweet and Sour Sauce

    Combine Sauce Ingredients

    In a saucepan, combine brown sugar, ketchup, apple cider vinegar, soy sauce, and pineapple juice. Stir until the sugar dissolves and the mixture is smooth.

    Thicken Sauce

    In a small bowl, mix cornstarch and water to create a slurry. Add this to the saucepan and cook over medium heat, stirring constantly until the sauce thickens, about 3-5 minutes. Remove from heat.

Cook Vegetables

    In the same skillet used for the chicken, add the sliced bell pepper and onion. Sauté for about 3-4 minutes until they start to soften. Add the pineapple chunks and cook for an additional 2 minutes.

Combine and Serve

    Mix Chicken and Sauce

    Return the cooked chicken to the skillet with the sautéed vegetables. Pour the sweet and sour sauce over the chicken and vegetables. Stir to combine and heat through for about 2-3 minutes.

    Serve the sweet and sour chicken over cooked rice. Garnish with sesame seeds and chopped green onions, if desired.
