Prepare the Soup Base

    Combine the Broth and Aromatics

    In a large pot, combine the coconut milk and chicken or vegetable broth over medium heat. Stir in the chopped lemongrass, sliced galangal, torn kaffir lime leaves, and smashed bird’s eye chilies.

    Simmer the Base

    Bring the mixture to a gentle simmer and let it cook for about 10 minutes to allow the flavors to infuse.

    Season the Soup

    Add the fish sauce and brown sugar to the pot. Stir well to dissolve the sugar and season the broth. Taste and adjust the seasoning if necessary.

Cook the Shrimp and Vegetables

    Add Shrimp and Vegetables

    Once the soup base is flavored, add the fresh shrimp, sliced mushrooms, and halved cherry tomatoes to the pot.

    Cook Until Done

    Let the soup simmer for another 5-7 minutes, or until the shrimp are pink and opaque and the mushrooms are tender.

Serve the Soup

    Ladle the hot soup into bowls and garnish with chopped cilantro. Serve with lime wedges on the side for added flavor.
