    Prepare the Shrimp

    In a bowl, season the shrimp with salt and black pepper. Set aside.

    Prepare the Vegetables

    Dice the onion, tomato, and pineapple (if using). Chop the cilantro and set all vegetables aside.

Cooking

    Sauté the Garlic and Onion

    In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and diced onion, and sauté for about 2-3 minutes until the onion becomes translucent.

    Cook the Shrimp

    Add the seasoned shrimp to the skillet. Cook for 2-4 minutes, stirring frequently, until the shrimp turn pink and are fully cooked.

    Add the Rice

    Add the cooked jasmine rice to the skillet. Stir to combine with the shrimp and vegetables.

    Season the Fried Rice

    Pour in the soy sauce, fish sauce, and lime juice. Stir well to ensure all the rice is coated with the sauces.

    Add the Vegetables

    Gently fold in the diced tomato, chopped cilantro, and pineapple (if using) into the rice mixture. Cook for an additional 2-3 minutes until everything is heated through.

    Finish and Serve

    Remove from heat, garnish with additional cilantro if desired, and serve hot.
