Curry Base

Method

Prepare the Curry Base

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium heat.

    Add Curry Paste

    Add the Thai curry paste to the skillet, stirring it into the oil for about 1-2 minutes until fragrant.

    Add Coconut Milk

    Pour in the coconut milk and stir until the curry paste is fully incorporated.

    Season the Sauce

    Stir in the fish sauce, brown sugar, and lime juice. Bring to a gentle simmer.

Cook the Shrimp and Vegetables

    Add Shrimp

    Add the shrimp to the skillet and cook for 2-3 minutes, or until they start to turn pink.

    Add Vegetables

    Add the sliced red and green bell peppers, carrot, zucchini, and snap peas. Stir well to combine.

    Cook Until Tender

    Cook for an additional 5-7 minutes, or until the vegetables are tender and the shrimp are fully cooked.

Serve

    Garnish and Serve

    Remove from heat and stir in fresh basil leaves. Serve the curry hot with lime wedges on the side.
