Broth Preparation

    Prepare the Broth

    In a large pot, combine the water and chicken broth. Add the star anise, cinnamon stick, cloves, ginger, and halved onion.

    Simmer the Broth

    Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let simmer for 30 minutes. Skim off any foam that forms on the surface.

    Season the Broth

    After simmering, add fish sauce, sugar, and salt to the broth. Stir well and allow to simmer for another 10 minutes.

Noodles and Shrimp Preparation

    Cook the Noodles

    While the broth is simmering, prepare the noodles according to package instructions. If using rice noodles, soak them in hot water for about 10-15 minutes until softened. If using glass noodles, cook them in boiling water for 4-5 minutes.

    Cook the Shrimp

    In the last 5 minutes of the broth simmering, add the shrimp to the pot. Cook until they turn pink and opaque, about 3-5 minutes.

Serving the Pho

    Assemble the Pho

    In a bowl, place a portion of the cooked noodles. Ladle the hot broth with shrimp over the noodles.

    Add Garnishes

    Top with fresh basil leaves, bean sprouts, lime wedges, sliced jalapeño, and sliced green onions to taste.
