Noodle Preparation

Soak Noodles
If using regular rice noodles, soak them in warm water for 30 minutes until softened. If using glass noodles, soak them in hot water for 15 minutes until they become tender. Drain and set aside.
Cooking Shrimp and Eggs

Cook Shrimp
In a large skillet or wok over medium-high heat, add a splash of oil. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove from the pan and set aside.

Stir-Frying Vegetables

Sauté Vegetables
Add a bit more oil to the pan, then add minced garlic, julienned carrots, and chopped green onions. Stir-fry for 2-3 minutes until the vegetables are tender but still crisp.
Making the Sauce

Prepare Sauce
In a small bowl, mix together the fish sauce, sugar, tamarind paste, chili powder, and lime juice until well combined.
Combining Ingredients

Add Bean Sprouts
In the last minute of cooking, add the bean sprouts and toss to combine.
Serving

Garnish and Serve
Serve the Pad Thai hot, garnished with crushed peanuts, lime wedges, and fresh cilantro if desired.
