    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the lo-mein noodles and cook according to package instructions until al dente. Drain and set aside.

    Prep the Vegetables

    While the noodles are cooking, prepare the vegetables: slice the bell pepper, julienne the carrot, and chop the green onions. Set aside.

    Mix the Sauce

    In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and water until well combined. Set aside.

Cooking

    Sauté the Shrimp

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove from the skillet and set aside.

    Stir-fry the Vegetables

    In the same skillet, add a bit more oil if needed. Add the bell pepper, carrot, and snow peas. Stir-fry for about 2-3 minutes until they are tender but still crisp.

    Add the cooked noodles and shrimp back to the skillet with the vegetables. Pour the sauce over the mixture and toss everything together until well coated and heated through, about 2-3 minutes.
