Preparing Noodles

    Cook the Rice Noodles

    In a large pot, bring 4 cups of water to a boil. Add 8 oz of wide rice noodles and cook according to package instructions until al dente, usually about 5-7 minutes. Drain and set aside.

Cooking Shrimp and Vegetables

    Sauté Aromatics

    In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add minced garlic, sliced shallots, and sliced red chili (to taste). Sauté for 1-2 minutes until fragrant.

    Cook Shrimp

    Add the shrimp to the skillet and cook for 3-4 minutes or until they turn pink and are cooked through. Remove shrimp from the skillet and set aside.

    Stir-fry Vegetables

    In the same skillet, add bell pepper, carrots, and broccoli florets. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Making the Sauce

    Combine Sauce Ingredients

    In a small bowl, mix together soy sauce, oyster sauce, fish sauce, brown sugar, chili paste, and lime juice. Stir until the sugar is dissolved.

Combining Everything

    Combine Noodles and Sauce

    Add the drained rice noodles back to the skillet with the vegetables. Pour the sauce over the noodles and toss everything together, ensuring the noodles are well coated. Add the cooked shrimp back to the skillet.

    Add Basil

    Toss in the fresh basil leaves and cook for an additional 1-2 minutes until everything is heated through.

Serving

    Plate the Dish

    Serve the Shrimp Drunken Noodles hot, garnished with lime wedges and chopped cilantro to taste.
